04 Sierra Electric fan swap with controller not PCM

Looking to do a long distance trip from GA to NM next month. I am doing all the normal maintnance stuff to my truck in the mean time but I was thinking this may be a good time to do an electric fan swap for a little better MPG.
From the research I have done it looks like most people are using an oem or oem style harness and getting a tune to control the fan. I really dont want to pay for a tune right now as I will be adding a cam and exhaust this summer. I have been looking into a controller with a temp sensor to engage/disengage the fans. I know I want a controller that has an AC input so the fans will come on with the A/C as well as the preset temps. Can anyone reccomend a controller?
I guess I also need advice on which dual fan swap would be best for my truck?
05+ silverado fan set
LS1 fans
2 Aftermarket single fans
Also not sure how it needs to be setup with the dual fans. Low speed fan when the AC is on and High speed fan with the desired temperature is reached?

buy an 05+ silverado fan set from ebay, Buy the harness and run two switches until you get it tuned.when you do get it tuned all you will have to do is remove the switched and pin it in.
