Default where should we go for our 1st anniversary?

my wife and i were married in late October of this past year. we went on a 7 day cruise to Mexico for our honeymoon. it was a blast, but i think we scared 2 couples that we meet on the cruise. we all realized that we were married on the same day, and started to hang out. being from the south, my wife and i are very out-going and a little loud.... especially after a few drinks!

anyway, we want to go on another trip for our 1st anniversary, but we are on a budget. i would like to keep the spending under $1500. if we could help it. she and i are active, and love being outside. we don't want to spend our time taking tours. i want to be in control of what ever we do...... no horse back rides where the horse follows the *** in front of him. no glass bottom boats, or double decker buses that point out celeb houses!

on our HM, we went scuba diving, drove a 2 seat-er speed boat on the coast, did a zip line deal through the tree tops, drove a jeep through the jungle..... we are active and like a challenge and a great view.

we also would like to keep any flights to a minimum. i would like at some point, to see what snowmobiling and snow boarding is about, but i understand that is the wrong time of the year.

what have you done, or what do you suggest?

for the anniversary weekend.
i would start in San Antonio, have dinner on the river walk.
stay in a nice place and get up to go http://www.naturalbridgecaverns.com/ in the morning.
grab lunch and then go to new branufels rent a raft or tube and take a 6 hour
ride down the beautiful and scenic Guadalupe River in the heart of the Texas Hill Country.
stay one more night and have dinner in a different place on the river walk.
