I was actually planning on a wet shot , and have the hardware to do so...
but I have always been a bit afraid to put fuel into an efi intake and recently I learned about how to use a dry shot...
So I realized how easy it is to use the sock computer to add fuel and pull timing by witching the IAT or ECT to some resistors with some relays...
have any experience with this method?

I have a lot of experience with the IAT timing trick. I ran it when I had nitrous. Worked flawlessly. I think I talk about it a little in my build thread..

Looking good Mike! Ill be there Monday to start on the A/C brackets mount. Got the swap motor mounts in and the gaskets to rebuild the water pump.

Yeah Alex is a co worker and friend.
So as for the IAT, I see there is also a table called initial adder vs IAT.
Can I use this table to bump up the commanded afr to produce the fuel enrichment when spraying?

You could, yes.
You would show an AFR error through those cells while data logging though. If your VE is dialed in and then you suddenly inject air and simply command a fatter fuel ratio you could get it where you want, but the computer will recognize it as leaner than you are commanding. I don't necessarily see a problem with that, but I think I would rather do a wet shot.
