how much power is acquired by removing cats?(5.3 truck with stock exhaust)

On a stock truck, none. Unless your cats are plugged or something.

^^^ agreed.. I have seen a few dyno charts where people would pickup 7-12 hp by removing the cats.. But these were FI motors and that gain was up in the revvs..
