Default High Flow Cats and O2 Sensors

I already have the Gibson Shorty Headers and FLowmaster Super 40 Series muffler.

I want to do high flow cats or hollowed out cats, but am worried about changing them with the stock o2 sensors and what kind of effects this may have. Will my Check Engine light come on?

Do they make O2 Sensor simulators that will tell the computer that the exhaust is good and it wont try to dump extra gas or air into the motor?

Thanks for the help.

The O2 sensors in FRONT of the catalytic coverters wil effect fueling, the REAR O2 sensors only monitor Catalytic converter conditions.
