A friend of mine has a 2011 sierra denali and had a set of longtubes put on and done the exact same thing as yours. It turns out that when he would floor it the motor would flex and it arced out a ground cable and complete power loss in the whole truck. Look under the hood at night and rev the engine in park and look around the passenger side of the motor along the frame for a arc.
