Sandwich plate oil cooler?

Default Sandwich plate oil cooler?

Wondering if there are any disadvantages to having a sandwich plate adapter at the oil filter for oil cooling? I like the idea of an Earls performance thermostat sandwich plate which opens up at 160deg and thus allows the use of a larger oil cooler without the fear of over cooling the oil especially with 160deg thermostats on board. I could block off the stock oil feed/return lines as well.

Opinions welcome.
