not correctly and not enough because it would still think that the engine was supposed to be stock and try to compensate as though it were instead of what the engine actually wants. the MAF tables don't come into play for rapid throttle changes anyway as their readings will lag slightly behind what the engine wants right now, the VE tables are used in that case and they would be calibrated for a lot less air than you would pull in so it would lean out.

If its not forced inducted, drive the thing. Even if it leans out, it can't force enough extra air in to hurt anything. It might blow the spark out if it gets too lean, but you will know that. We put my cam and stuff in and I went and beat on it as soon as I got it to idle on its own. Took a week and a half for the tuner to get me in. 165k miles on the stock shortblock and its still together even with the wife driving it all the time.

The biggest thing that can change a tune are injectors. If the injectors are the same, it should idle and cruise pretty good. They make scanners for smart phones these days. (I have "Torque" for my android) I would scan your trims and see what it is running like. I wouldn't make any WOT runs though. If the trims are off too far, I would not run it at all until it has been tuned.
