Yes, you will have to remove it completely.

Is there anything special i need to remove/install it and how difficult should it be to do this? When i called a local performance shop about a quote for the header install, they told me i would need a new dipstick?

You won't need a new dipstick or tube unless you manage to break yours.

Removing it is easy.
Remove the dipstick from the tube.
Remove the single bolt holding it to the head, save the bolt.
Pull and twist the tube, back & forth, straight up out of the block.
Clean up the tube & inspect the o-ring. Replace o-ring if needed.
You may need to grind/trim the tab to clear the header flange.

After you have the passenger header on, you can reinstall the tube.
Lubricate the o-ring with assembly lube or clean engine oil.
Use a small flashlight to help see the hole in the block.
Twist back & forth as you push down & seat the tube.
Bolt tab to cylinder head.

Finally got the tracking number, and the headers should be here friday. Hoping to install them Saturday. Will i be fine re-using my stock manifold gaskets? Keep in mind the truck has a little less than 5000 miles.

YES!!! Finally they are here. I will be installing them tomorrow. Hopefully everything goes smooth. Can i use the gaskets that came from american racing or should i re-use the stock ones? Also, whats the torque spec for the manifold bolts?

I would reuse the stock ones. The GM gaskets are much better. 18 foot pounds I think. I would do two passes. First like 10 or so starting from the middle and working out.
