I couldn't give you an exact answer, but more is generally not better. The more oil you got in there the more resistance to flow, may cause some sort of failure of the pump. I'm just boggled at how everyone thinks they need a "high flow" oil pump and LS2 timing chains and all this other BS. I suppose everyone just follows whatever some "guru" says like puppets.

Mine holds a little over 6, but I use a longer filter, about the length of the old PF-59.
I'm not sure how much volume my stock pump puts out, but oil pressure has never been a problem for me, not sure what the factory gauge numbers figure out to in reality, but my gauge always pegs at WOT, and is over 40 psi at idle with either Mobil1 or Amsoil 5w-30. Too much pressure can blow seals out and may cause blowby into the combustion chambers...although I'd think/assume/hope that a GM factory part wouldn't have that problem, especially since it's a production part.
If you're only a quart over-filled you should be OK, but too much oil can definitely cause problems. The oil can foam and lose it's ability to lubricate, as well as find it's way into the intake through the PCV system, which is already a problem with the GENIII engines with the oil at the correct level.

If you have had your oil pan off before You will see the full mark on the dipstick is about 1" below the windish tray. Seven quarts don't even fill the pan up completely. the pump I used it for the NNBS with displacement on demand. Yes, LS1, LS6, 4.8, 5.3, 6.0 are the same pumps and you can only buy an LS2 chains all new GM LS motors chains use the new bigger chain.
