Fuel pump would be my initial guess. I had a 97 Suburban and it would act up on me...wouldn't start, wait 20 minutes, and it was fine. Died on me a few times while driving too, wait 20 minutes and it would start right back up. New fuel pump, no more problems. Do you hear the fuel pump running when you turn the key to run but don't crank it over?

you will usually only hear it run a second or two at initial key on engine off. pull the breather, have someone turn it over and see if its got fuel.
if you've got fuel, check the ignition module in the distributor. these are the two most common problems with the older chevrolet trucks.
