Default Fuel/Air Delivery experts needed

Need some help here. Truck keeps going to sleep on me.
Here's the facts.
I changed converters from a 9.5" 3000 stall to a 12" 2500 designed for towing. Not only that I went from a 31" tire to almost a 34". Pretty much turned my z71 from a street truck back into a off road truck.
Here is my problem.
Every time I go through a gear or two at WOT and then slow down for whatever reason, the truck wants to die. During regular driving I don't seem to have this problem, just after a hard run. Today when this happen I pulled over and listened to my truck dropping down to like 400 rpm's loping like it was about to die. Also, the engine light was blinking? The smell of gas was unbearable out of the exhaust. I stuck my head under the rear bumber and almost suffocated. (running rich I'm assuming") So should I be getting Wheatley to re-tune since I made these changes? He did a live 93 tune with the old setup.
I should also add that I just installed a new K&N filter and have already cleaned the MAF twice since. That oily *** filter might be creating a problem too.
By the way its an 04 z71 with all the bolt-ons.

Blinking engine light is a misfire. I'd start by checking plugs and wires first, then injectors. I think you have a mechanical problem that needs to be addressed first, then maybe a tuning issue after that depending on what the results are.

OK i'll start there, but tell me how much since this makes.....when i restart the truck it is fine. Which makes me think it is more electrical. And like I said before....it drives great when it stays below 4500 rpms.

Blinking Check Engine Light is usually a indication of a severe rich condition. There is so mush fuel that it is damaging the catalytic converters. How did you clean the MAF sensor?

ok its definately running rich....but only ater I go heavy throttle then slow down. If i restart the truck it seems to be fine. Just used MAF sensor cleaner. I think its made by CRC or something like that. Simple to use. Need some help here guys. Just happend again about 10 minutes ago.

also, cat converters are non existent on my truck....long tubes/ORY

Can't see it being a tune issue when it has been fine all this time.If the SES light is blinking,then you have a missfire.
Check plugs,wires and even could be a coil but I doubt it,but you never know.
Missfires will cause these symptoms

ya im with you charlie.....i dont see it being the tune either. To me it's just weird how it only does this after I romp on it. And the smell of gas is truely unberable.
