Default exhaust question

I'm planning on doing some more exhaust work. Currently I have a borla system dumped. I'm planning on going with headers(no idea what brand)and another borla muffler. I called my local muffler shop and asked them if they would run everything if i cut off the cats. They said they would, but I would just bring it back to get the cats put back on. I don't know if this is some sort of way to talk me out of it, or if would make the truck run like crap. What's the deal? Cut the cats or leave them there? Thanks

if you cut the cats you are gonna need o2 sims as far as i know. i want to do the same thing but was told to get those first then the guy that is gonna do the work will discuss it with me. he knows a good deal about our trucks so i trust him.

if you cut the cats you are gonna need o2 sims as far as i know. i want to do the same thing but was told to get those first then the guy that is gonna do the work will discuss it with me. he knows a good deal about our trucks so i trust him. in fact, your close, find out how much they want to do it and i will see if this guy can beat the price for you. only prob is you might have to drive to p'yune

if you just degut the cats whats this worth?
is it better to just remove them totally
can the truck run without the sims?

see, i'm not sure what the gain you will see with going without cats or just gutting them. from what i was told the truck won't run right without the sims. basically the computer is gonna read everything as being ok with the sims in place. and not ok without the sims.
