I'd lean toward a 370 for daily use.

For a daily Id do 10:1 static compression, use the square port heads and intake, cam with a lot of exhaust duration. Long tubes, 93 octane, street safe tune, 1800ish stall

408 doesn't want to sing. I'd keep a gift points 6-6200, and take advantage of all that torque she wants to make with a low stall speed

Do a 370 like mentioned for a daily.
my piston skirts hate life in my 408. For normally driving a shift at 6500 but my tow haul setting is set at 7200 for when I feel like having fun.

I get around 17 on the highway also. (17 quarts per 1/3 gallon).

This is 260 highway miles. I have a blown head gasket or cracked head or block, I used to see almost 14 highway mpg. In my truck,, 17 mpg is pure fantasy.
