Default Cutting cats, no re-tune?

Say I cut my cats off and don't have the O2's tuned out for a pretty good while, will the truck be ok to drive? Also, I heard that when the truck throws a code it pulls timing, is this true?

my true ran fine without the rear 02s. threw a code for them not working right but still ran fine

It will be fine, the rear O2's are for monitoring only.
