what is the difference between the truck crank pulleys and the other (i.e. F-body/corvette) crank pulleys?

F-body pulley is smaller and has different location for belt groves.

If you are wanting to speed up your Radix you'll want a larger diameter crank pulley.L-Eater had one custom built by ASP.

just want the stock size right now. I've heard 7.5 and 7.75.

7.75" is correct for a truck pulley.

Are the 4.8, 5.3 and 6liter crank pulley's all the same?

Yes all three truck pulleys are exactly the same.

Offset....you will need a new accessory drive like the f-body if you want to use the crank pulley.
