I like your install. I was looking to put mine in the same place, but I couldn't get a bracket together with my limited supply of metal stock. I can pull off your bracket for sure - I don't know why I didn't think of doing it like that.

....and I will note even though I am 6'2" it takes a tippy toe move to look into the can where I put it. Perhaps swinging it to the fender side bolt may help. I already trimmed my hoses to suite the current location.

I mounted my AMW catch can to the fuse block plastic bottom shroud. It comes with just enough rubber hose. It's easy to get too for people under 6'.

I see a similiar amount of oil as you but, in probably two times the distance.

I'm 5'11... I keep two cinder-blocks off to the side of my driveway for when I feel like poking around under the hood. It's definitely easier on the knees...
