The catch can retains any oil that is sucked through the PCV hoses from the valve cover. Without the can the inside of your intake manifold/runners and cylinders will get horrid nasty. Sometimes a buildup gets so bad it can start to cause a ping problem. The carbon on top of the pistons stays so hot that IT ignites the fuel rather than the spark plug.

Catch cans are pirmarily used in ultra high compression/power engines and forced induction when there is a ton of cylinder pressure. Sometimes the cylinder pressure pushes past the rings. This causes the crankcase to pressurize and "push" oil out, usually thru the PCV or crankcase vent on or near the valve covers. The cans gather the oil like shown in the clear picture instead of putting it back into the intake tract. Oil is heavier than the air moving it, so the oil drops to the bottom of the can while the pressure moves into the intake ( minus most of oil ). They can be used anywhere oil is not desired like mentioned in air compressors, air suspension, etc.
I like the clear bottom model as you can see when you are pushing oil and how much, although the billet one is beautiful!
