The 4.8 just isn't enough, time for a 5.7 build, but I need some opinions

I don't think that you'll need all new sensors, they seem to hold up pretty well. I'd maybe get an oil pressure sensor since they're prone to breaking upon engine removal, and seem to be the one sensor that will sometimes wear out and/or be a little less than accurate. The crank and cam sensors are basically magnets, and if they were bad you would have runability problems that would be quite evident. Coolant temp sensor is a resistor, and you can check the O2 sensors with a scan tool and make sure that there are something like 8 cross counts within 10 seconds. Basically, if the O2 sensors are switching from rich to lean rapidly with the engine revving at 2500 rpm, they are working properly. You could maybe do the O2 sensors for piece of mind. Of course if you want to replace them all to make you feel better that you're getting optimal signals to the PCM, by all means do so. My opinion is that it's not necessary though
