03 cooling issues - advise please

From: Yorkville IL - Chicago
2003 - 5.3 - with 7,100 miles -
- installed a 180F stat
also have a electric gauge in the RR of the RH head
so I know the auto meter gauge is accurate.
Also an underdrive pulley

here is my issue
at 70 mph on the highway - gauge reads just a tick under 195 F
as soon as you get into stop and go traffic
heats right up fast to 210 and stays there
between lights.... it might sit between 195 and 210
I want to stay cooler than it is.
possible solutions
1. remove the underdrive pulley and see what the temps are
or
2. install a 6.0 radiator (which is slightly larger) - keep the underdrive pulley
and see what the temps are.
or
3. dont worry about it.

I Would Not Worry Just To Let You Know A Friend Of Mine Put A 98 5.7 Vette Motor And Everything Fine Then Put 3.73 Gears And Ud Pulley And His Truck Started Running Hotter Than Before.then He Wanted To Remove The Ud Pulley Instead Of Installing A 160*,then Started Running Fine Again.
