Height will usually give you more traction than width. The more height the circumference is larger thus more rubber on the arch is touching the ground at the same time vs a shorter tire with the same width. Also the sidewall is more forgiving and gives more cushion.

width is better the taller the tire the more your aceleration suffers. that why when you lift a truck with taller tires you arent as fast as before unless you re-gear your rear end. it all depends on your setup.
