thinking about getting a fuddle convertor got some Questions

seeing as im getting a new trans why not get a bigger stall. from waht i have been reading fuddles stalls higher then they are advertised.
my set up
5.3, ecsb 4wd
3.73 with eaton posi
K&N intake
pacesetter lt and y pipe
3inch cutout
elelctric fans
nelson 93 oct tune
underdrive pullies
160 stat
and posibily mid size cam and a 100 shot by the end of the summer, so i wnat to take those into consideration too.
im looking for it to flash at 3000-3400 rpms, what size stall should i get inorder to get it to stall in this range, im tring to get it done right the first time that way i dont have to take it out and send it back in.
for those that have fuddle and it stalls high, how is the driveability? is it a loose convertor or is it tight even though it flashs high.
