Finally found some spacers that were 2.47" and with two washers the brackets are spaced out. Ended up finding a good deal on the escalade rotors so I went that route. The calipers are clocked in the 4:30 position, I figure thats the closest to stock.

What was the cost to have them made if you don't mind me asking???

What did you end up doing regarding the brakes, calipers, and rotors???

Looks like it came out pretty good!!!

The spacers are just stainless steel 1/2" tubing?

Here's what I used for spacers.
1 Spanner Bushing Spacer Reducer 5/8" OD - 1/2" ID - 2-7/16" Long 55000-16 | eBay
A better shot of the caliper in its final position.

You think those spacers will be substantial enough when you're on the binders real hard? Or are you going to box them in? I see that twisting up pretty good, in my imagination.

I tend to agree.

Even though I have seen similar idea's using washers and various spacers, from a structural standpoint it doesn't seem safe.

I never had a problem using nuts and washers exactly like that...ran it that way for about 2 years before I had new flanges made to weld on. 2.5" was the magic number for me as well.
