I have 4.10's with a 28in tire and I cruise on the highway at 70-75 at roughly

2500-2600

That is why I say roughly. I almost always cruise on the highway at 80-85, hence higher RPM. A lot of charts always show RPM at 55, and who does that?
(80mph x 4.10) / 28 x 336 = 3936 divided by your O/D ratio, .70= 2755. There is going to be variance from converter slippage and tire growth or inflation. I didnt do the formula the first time, just went off of experience from cars with similar set-ups. It is not that bad, and you have good throttle response on the highway also.
