Opinions on my build

That will definitely help with spool time.
You will find that your drive pressure is really low with the combo you want to build. That's GREAT for making horsepower, but not great for spool times. It allows for as ton more flexibility in the cam choice which can also aid in max HP potential.
They are probably 750HP turbos, so you have a 1500hp combo on your hands thats only going to be pushed to maybe 700 at the crank? Yes I think that turbo could make due as a single... but its on the small side. a 72-75 would be happier on a 6.0

I'm putting a s468/87 1.0ar and 100% over injectors on the Cummins. The 465 did great with stock fueling but wanting a bit more from it.
So would it work for the Escalade? Just figured if I have it I could use it lol. If not I could probably sell it to help cover the cost of of a new turbo that is better suited.
