I ran a set of 6.0 cats from a 2500 on my setup. The exhaust was routed the same also.No problems getting smogged for me either.I would be willing to bet they hold up pretty good too beings that they were designed to withstand harsh towing conditions. The cats are quite a bit bigger than stock or after market.
Hell I have been toying with the idea of going with the 4" stainless cats that get installed on large kohler generators.

Smelling rich when you are in boost is normal, I mean you are running rich hopefully.
I heard from Rick that the referee stations have been closed due to the California budget crisis, so I believe you just get a fine for now.

That was Chase I believe. I have some pictures of my 3" metal substrate severe duty cats that melted. They are very similar to random technology.

What kind of exhaust temps does it take to melt a converter?

I like it! It would take a little work since I have the converters welded up to my collector and sweep but it that looks easy enough for now. If it passes the sniffer than I'm good to go... If not I can pick up a set of Magnaflows for a few $.

Not necessarily removing the cats but the inner material and leave the case. With the modern vehicles having better fuel injection, ignition, tuning ect… I am curious about the how much less emissions are present before the cats. Do the catalytic converters really do as much now as they used to. Running WOT or 11.7-12.5 AFR in boost I’m sure they are going to get a work-out but they will probably never see that at the smog check. I’m pretty sure I will be getting the Magnaflow cats but I just want to try some alternatives while I’m going thought the effort of replacing them.
