Butcher paper is definitely where it’s at for wrapping. After trying it I won’t go back to foil. I use it for all meats.

400*. 4mins a side. Chunk of hickory thrown in for fun. Came out perfectly rare which is how we like them. 6yr old has eaten one of the ribeye’s herself.

I did 2 pork tenderloins on my Camp Chef last night, came out great! I love that thing, hardly use the Wilmington Grill now, cooking over a wood fired grill makes it taste so much better. I should have snapped a pic they looked amazing and tasted even better. My 8 year old son almost ate an entire loin.

For a crappy cut of brisket, it turned out ok. Actually went and rendered the fat I trimmed off and injected it back in to it. Not certain it was worth it.

Dang, no one posting any Thanksgiving Turkey?🤷

I made this the first week of November: wife bought a 16# bird. I know this is not conventional, but I started making it like this for like the 3 rd year and it's working out for me. I cut it up into pieces. That allows more seasoning to hit more surface area and faster cook time. I put it in the grill but had a nasty storm rolling in, so after about 45 minutes I fired up the oven.

Wife had me add some Chile Guajillo (we put that **** on everything, LOL.) Altogether it was 2.5 hours. Just had to slice the breast afterwards.with some salsa verde and sides, wife and kids LOVED it. Little ones kept asking if it was Thanksgiving!? LOL

Yesterday we met at my BIL'S house, and has developed a slightly different, but similar recipe...added Mexican chorizo. I was pretty darn hungry, but I was thinking his was actually better. No pics of that one. 😒

Wife made a whole salmon fillet for lunch (no pics...&#128530.

It's wet/damp so I'm staying indoors. Baby back ribs. I'm a simple seasoning guy: all-purpose seasoning, paprika and oregano milled on the palm of the hands. It's on the oven, but I ain't complaining. 😊

Dang, are we overating our grilling/smoking capabilities! Note these are are BBQ sauce-less option.

Spoiler alert: Yes!

Add roasted salsa verde w/ tortillas 😊, Carolina BBQ sauce, homedade BBQ sauce, Kraft BBQ sauce (same difference?) , ketchup?, What else?..to taste?

Nothing fancy, I smoked a ham in my Pit Barrel. Everyone loved it.

Wife handled the turkey.

I did a 12# pork picnic and a 17# prime brisket for thanks giving. I prefer a pork butt, but HEB didnt have any. The cook on the brisket took way too long but it came out great. 16.5 hr cook with an additional 7 hr rest. Unfortunately I'm stuck doing brisket and pork for thanksgiving every year going forward.
