Most shops will charge labor based on the parts they have to remove. Using Mitchel to get a labor quote it's 21 hours of total labor to do a full cam swap. That includes removing both cylinders heads, lifters, front cover, timing chain/pump, cam gear and camshaft. Doing the cylinder head work itself is another labor time if going by a book.
A performance shop likely won't charge that much because some steps would be skipped in the labor book. $1,000-1,500 is just a guess.

I installed my own and it's really not that bad... More time consuming than anything.... I removed the spark plugs and used compressed air to hold the valves in while changing springs and seals.. Also, get something like this spring compressor. They work pretty slick.

On my old 5.3 engine, can, springs and a torque run me less than $600 labor.
1. Cam can be out in 30min.
2. Trans can be out in 30-40min (assuming you have a lift)
3. Springs can be done in a couple of hours.
It really isn't that hard. A cam only swap can be done in 90min.
