Get the codes out of the ECM. Could be in CAT protection mode.

Well, I cleaned all the junk out of the cats and replaced the stock muffler with a Bullet one...

My CEL went off and it runs better but I still feel like there is some power missing.

Nice that you spent the time & effort to gut your cats & replace your muffler, and take a video of it. But the codes that everyone is asking for(so they can HELP you, rather than make RANDOM W.A.G. suggestions) are called D.T.C.'s. That stands for Diagnostic Trouble Code. Without that very valuable information, you are truly pissing in the wind.

Well my truck was down and not running at the time ppl wanted me to get the codes. I don't have a scanner and I couldn't get to one either.
So while all my **** was off anyway I went ahead and gutted the cats and put the Bullet on.
When I got everything back on the truck and drove it down the road the CEL wasn't on anymore. Notice the video, NO CEL.

So tell me, JACK, how do I get the codes when there isn't any?

There are still stored in the computer............GO HAVE THE CODES CHECKED!!

I went to have them checked but since the CEL wasn't on no one would do it...

Anyway, on my trip to town it came back on, so I pulled into the closest parts store and had them plug it in.

Got 5 codes:

P0118
P0420
P0430
P2270
P2272

I hope I can just replace the coolant temp sensor, tune out the rear O2s and be done with it...
I'll give it a try and hopefully my problems will be solved.

As mentioned before, the PCM stores the codes in history, even after your check engine light goes out. So the information needed is still there, even if you disconnect the battery.

I have poor throttle response, shitty gas mileage and no power...

WTF is going on with my truck? When I'm cruisin along at 65 and the truck is running about 1800-2000 rpm, I can give her a little gas and it just feel like she has to try so hard to speed up just the slightest bit...

p0420 and p0430 are catalyst efficiency codes p0118 is coolant temp circuit high which means more than likely an open in the circuit in the wiring or the sensor itself which will effect fuel economy depending on the temperature of engine and power as well. i consider the 420/430 to be the catalytic converter death codes.
