Has anyone built their own harness for electric fans, 05+ or LS1?

Yes sir. I have built three. I have experienced Nelsons harness on two vehicles and ended up redoing the wiring to my liking.

Where can you get the fan motor connectors at for the 05+ fans? I've got a relay block with 4 relays in it off a Chrysler Siebring that would work nicely but I would need the connectors and terminals to make it clean.

Yep. Made mine a few years ago. Worked with my LS1 fans and works with my current 05 fans. Cost me about $60 to make. You can get the connectors from ebay for about $10.

If you can read this then you can make your own
