Default Bad temp sensor?

Took a week for vacation first time since 07. When I returned I started my truck yesterday and the temp on my radio read 34 deg when it was clearly in the 70's. It did get cold while I was gone. Ran fine though. Today it read normally and still runs fine. Wonder whats up?

It takes them forever to update the temp. Not sure why but I've seen mine say 20's when it was in the 60's from parking several days prior.
