Default AC issue

My 2014 work truck AC mysteriously stops working. It's happened several times now. The compressor stops, the fans run super high and the cluster temp gauge goes to minimum (160). Have to disconnect the neg battery cable. Figure it must be a loose connection someplace. Ideas before I have to do without it for a few days in the shop?

Wonder if a sensor went bad. Verify the PSI in the system and that it is cycling properly. Then check the Live data on a scanner as it cycles.

If a sensor it would have to be intermittent I suppose? It has cooled fine all summer it just stops for no reason and the temp gauge thing is what's confusing to me.
