Need advice here

that video is sweet mangled.
800 in a 2wd is going to be crazy... i love HP but I gotta agree it sounds like too much in a DD. For that kind of power everthing on the truck will need to be built for it, or it just wont work nearly as well as 800 HP should.

I don't know you or your situation but many people come up with a crazy number and don't have a clue what that means. 800 hp is a ton and unless you really know what is going on or have a huge pile of cash you will never easily be able to daily 800 hp.
Two ways to logicaly daily 800 hp would be boost then turn it down when you are on the street, or build 500 hp N/A and use 300 of nitrous.
I personaly have a 408 the made 530 hp with a better set of heads so I am guessing it will make 475-500 with my heads and it is build for 350 of juice. It is a 408 with high compression so it won't be driven on the street much since it will need race gas. I would think you could make similar power on pump gas but you would be in the lower 400 range.
Boost is honestly a cheaper alternative because many guys have turboeds stock bottom end 4.8/5.3 and made 700-800 hp. If you make a more reasonable plan of 600-700 hp all you need to do is boost your current engine. This is the route I would go if I had to do it all over again.
Regarless of how much power you make if you get close to your goal you will need to look into the trans soon(unless you are very lucky) so plan on another $1000-$3000 depending how you choose to address the trans issue.
All in all I would say the least expencive way to meed you goal and add a trans for reliability is going to be $5500 and that is boosting the stock engine and swaping a stock 80e. Any other route is easily going to go over $8000

I thought about boosting the 5.3, but I just don't want anything to break really, so I was just going to try to do everything right the first time with a built drive train. But yes, I was planning on driving it on the street with low boost, then turning it up at the strip when I have traction. Was also planning on getting a built 80e and rear end. Am I asking for too much? I'm just looking for advice....

I think you are asking for too much hp.
A built trans, boost stock engine can get you into the 600-700 fairly easily. A few guys have shown it to be reliable too. Foose has been boosted for a long time with spray and his 4.8 is holding on.
Like I said I don't know you, your money, or your knoledge and all of those are huge factors. If money is no object you can easily build a 408, boost it and be like Atomic making 1000 hp with some time. IF you have some good money, some know how and a few people to lean on for deals or help then 600-800 hp isn't out of the question.
If you have $3000 and no clue what is going on under the hood you are going to be lucky to make 500 hp any time soon.
