my girl friend is looking at some cheap steel wheels for my beater for christmas. how do i figure out what back spacing i need?

looking at something like these, o yeah it's a 1986 nissan 4x4 truck all stock

I'm not so familiar with those trucks, but if you want them to tuck you are most likely going to want something with about 3" less backspacing than the width of the rim. For instance if you are purchasing 15x7 rims you'd want a set with 4" of backspacing or if you had 16x9 you would want about 6" of backspacing.

Backspacing equates to wheel offset based on rim width. So rim with a 12mm offset wouldn't always equate to let's say 5" of backspacing

Those should be fine. Of course it varies from truck to truck based on how much the hubs/axle stick out past the fenders.

In short those 15x7s with 4" of backspacing should be just fine. They aren't anything crazy one way or another.

That would help a bit. Is it a 5 lug or the 6 lug setup. If it's the 6 lug setup, you could just run some stock chevy rims.
