I will prolly toss some skrimp kabobs on the grill...if the seafood market is open today.

Ha Ha... Kevo!!!! Did that yesterday. Decided that today was gonna be MY resting day. May go run some logs in my truck today. That's about it.

Making sirloin steak fajitas with a home made style mango barbeque marinade. Home made re-fried beans and some Zatarain's New Orleans Spanish rice. Here is the recipe for the marinade. I did substitute the sirloin steak for the flank and used peaches instead of the mango.

Mango Barbecue Marinated & Grilled Flank Steak
Michael Lomonaco

INGREDIENTS


• 1 ripe mango or two fresh peaches
• 1/2 cup good BBQ sauce** : or store bought
• 1/4 cup red wine
• 1/4 cup soy sauce
• 1/4 cup honey
• 3 pounds Flank Steak
• Several green onions, chopped
• Optional: 2 tablespoons hot sauce

DIRECTIONS
Peel mango or peaches, cut in two and discard pit.

Cut fruit into chunks and place in a blender. Add BBQ sauce, red wine, soy sauce and honey to the fruit in blender and puree together.

Place flank steak into a glass baking dish and pour half Mango BBQ sauce over the steak, allow to marinate, refrigerated, for 1-2 hours. Reserve remaining sauce for a table condiment.

Prepare an outdoor grill. Place marinated flank steak over hot coals and grill about 4 – 5 minutes on each side, remove and rest for 5 minutes before slicing across the grain.

Serve with chopped scallions scattered over the top and the reserved mango BBQ sauce.

I did watch him make this morning on the Today show on NBC. He said that you can also use this to make fajitas. Sounded good to me, so I'm trying it out. I am going to make some green pepper and onion up to serve with it. As well as chopped lettuce, tomato, cheese and salsa. Hope everyone is having a good holiday. Vince

welp just finished cooking and eating at the same time ahaha, thats the good part about being the chef.

it was skirt steak and chicken leg 1/4's and chicken wings.
