Default Will this be okay?

Going with the PROXES S/T just wondering if a 295/45/20 will fit okay on a 8-1/2" rim?
I know its been discussed but is it really safe? Anyone running them like that?

Current rims are 8.5" wide
Tire Section Width is 11.8"
Recommended Rim is 9.5 to 11" wide (why?)
I figured they would seat on the wheel okay since my 285/50's call for a 8-10" rim.

Also, I'm wanting to stagger them like:

Rear------295/45/20-----30.4 O.D with 5.2" Sidewall
and
Front-----255/50/20-----29.9 O.D. with 5.01" Sidewall

shouldn't be a problem. Dirt_track_racer_81 is running 295/40/20 on his with no problems for a few years now.
