you know those plastics on your motor??? well are they interchangable???? cuz it would be cool if you could take them off a ls7 and put them on a motor.... kinda ricer... but still cool....

Some are and some aren't without modification. The LS7 covers won't work on the truck engines without some serious modifications, and even still the 3" taller truck manifold wouldn't be covered, which is what I would want covered the most! 
You can go with Denali covers or Escalade covers pretty easily, as well as the VortecMAX covers. The SSR covers should bolt right on as well.

ls1 ls2 ls6 ls7 covers do not fit on a truck with the stock truck manifold, the covers that do fit are the escalade 3 piece covers ,vortec max 3 piece cover and the two different single middle covers, 99-02 had a boxy lookin single the 03+ has what your truck has

kdirectorate's right. The 99-00 had the "boxy" cover, the 01+'s have the rounded cover. There's an additional bracket that you'll have to get to run an 01+ cover on the 99-00 trucks.
I'm not sure about the EGR though. I didn't have any problems running my Denali covers when I had EGR.

I just tried puting them on again. The EGR on both sides is in the way. I am unable to get the bolts in. The smog equipment pushes the plastic out too far. I ordered the covers from the dealer. The guy said he couldn't find a 3-piece before '03, the ones I bought are for an '03 Denali, I think. They have the 6000 rather than the Caddy symbol. Based on what the dealer told me, I'm assuming that a 3-Piece engine cover didn't exist before the '03 models. Is that true? If not, that could be the problem. Maybe the configuration changed between an '01 4.8 and and an '03 6.0. What do you think... Is it a lost cause?

EGR is only on the passenger side. There must be something else that you think is EGR that's in the way.
Denalis started in 2001 and Escalades in 2002. I had the three piece Denali covers on my truck in late 2001/early 2002. There should be no issues at all with these covers fitting your truck if it's a 2001. They are a bear to get on there and it takes some patience to get them right, but once you get them right they go on just fine.

The only other thing with the trucks with the boxy cover, 99-00, is that you must switch out the valve covers to use the denali/escalade/ss covers since the valve covers do not have the threaded bosses in them, or so I am told.
I put a set of 03 SS covers on my 02 4.8l and they fit fine, however I don't have egr so I can't comment on that part.
