I think its your elevation in phoenix are you running a maf tune or SD? if you are leaned out due to the altitude change and your idle is searching around 675-800 that to me is where you get your chop. I know with my setup the lower the idle and leaner it gets the rougher it sounds.
mechanical possibility you could have a couple lobes starting to die out on you.. that could be the chop as well. I highly doubt that though. If you used GM stuff springs and cam it should be strong enough to last alot of miles. And with the baby lift and duration the ls6 cams have I know it's really easy on parts.
I would lean towards your afr check that against your DA I know certain parts of arizona are fairly lower than others.
just my .02

Checked it today. I removed the gauges because i got sick of them lighting up my face at night (i have bad eyes and with my contacts its already hard enough to see with all the city lights and traffic) AFR at idle is 14.5 to 15.5 sweeping at all idle times. So i just need to get some tuning done.
But it does sound nice. But it will be improved with some tuning.
Then who knows maybe the 6 liter will be done by then to.
