Default 4.3l knock sensor

I've got a '94 Sonoma that i've Frankenstined together with a '98 4.3L v6. it ran insanely fast one weekend, went a 14.43. Now the truck tends to be lazy and extremly inconsistent, a friend that races LT1's said it may be the knock sensor. So what will happen if i just unplug it?

It's go underdrive pullies, headers and full exhuast, 700r4 transmission, 4.10 gears stock tune and a some weight reduction, weighs about 3250 with me in it.

if you unplug it, the computer will likely revert to a very conservitive ignition timing, slowing you more. Not 100% on that though
