Welcome to the forum.
You're going to have to work hard, spend $$ to get 500 hp from any engine, expecially a small v8. Your best and cheapest bet would be a 6.0L swap and a big shot of nitrous but even then your going to fall short of 500hp. You'll also need to improve the stock drivetrain to sustain that kind of power.
Don't fret though, stick around a bit, read as much as you can and you'll figure out how to get where you want with your truck.

Do the LS7, that'd get plenty of attention.

all you have to do is pull your 4.crap out and put the ls7 in it's place, then get a tune to make it run in your truck. once you get that in there, then you can mod the **** out of that engine to make alot of power

The motor mounts are the same, you are right about the stock tranny and diff breaking. If forced induction is what you are looking for, 500 HP should be easy from a forged 402 or 408. If it were me, I would buy a 402 shortblock, call WCCH for heads, and wait for the Eaton TVS 2300 supercharger to become available. That would have a hard time making less than 500 HP, and be happier at 800 or so.

dam how much would that run me with tranny and diff add around 15-18 grand? and the 402 is pretty much a ls2 right? and why would that be the better choice? other then more power.

Good luck spending less than the 13 grand to reach your goals.
