is this just the new LSX blocks or do you do other builds as well (a semi forged LQ4 shortblock for example)?

We can do a nice forged 370 for you as well.

do they not make a shelf piston for the stock 6.0L bore (4.000")?

Yes there is an off the shelf, we could leave it stock displacement.
