I would like to build a 370 in the future for either the silverado or S10, maybe one day.. if you run the right combo your tune is good you should get roughly the same mileage. i dont see why your mileage would suffer.
You have to find a happy medium between the power you want and the mpg. I'm fine with the mileage I get, especially considering the power it is capable of producing.

Yeah, I love that one when you gave me ride on yours. I don't know how much horsepower you make at 7.5 also how much for full you on 5.7 with full boost? Tell me a reason why you decide switch from 370 to 347? Mine goal is 450-650hp

I plan to run turbo on stock 5.3 for a while until I get 347 or 370 to build to swap. I want to know how much 347 able make power? I can figure out which one I will stick it. I want more power for fun and for daily drive I could switch the low of boost. That way not get killer gas like as viper! Lol

if jims 5.3 torbo fairmont can make over 700 hp/tq to the rear wheels, im pretty sure you can make the same out of a iron block 347.
since everybody already said gas on a 370 sucks, and milage is a main point of the build, your not going that way.
im pretty sure after you run a turbo 347, your next step up will be 408 or 427, not 370.
