Go read up on the latest Car Craft Magazine, LS-power series. They just did a turbo on a 5.L 383 stroker and made 946HP/1006TQ. Also made a impressive 845/864 on 93 pump gas and meth.

How much HP/TQ you looking to make?

500-550 i plan to use the texas speed 11.0:1 compression balanced forged rotating assembly and their stage 2.5 heads and what ever cam they recommend. topping it with LT headers and high flow cats and a TBSS intake with a 90mm throttle body and a custom tune from Wheatley.

I think it would be wise to have your rotating assembly in hand so the machine shop can measure before they bore it.
But thats just me.

Wait until you get the pistons to bore the block.
