to a nitto ridge grappler 285/60/20 (33"×11.5") 10ply.
I expect it to be a dog, but I run mostly highway. I know I will need to regear it, but how bad of a drop do you think it will be?

+30% more throttle for all movement if you actually need to move at a reasonable speed? just a guess.
That's going to suck with a 4l60e. If you have any hills around it's going to downshift on all of them to maintain speed.

Depends on where you live. A flat ground area you'll notice it a good amount but tolerable. If your in a hilly or mountainous area you'll really notice it.
now 33's not huge so good on you for using some sense on that decision over 33's and you could get out and push it faster all the while your tranny's hatin life.
With 33's your 3:42's are roughly 2:73's

Actually going from 31s with 3.42s to 33s would drive like 3.23s all else being equal. Which isn't horrible, but you'd feel a difference. However keep in mind your rotating mass just increased as well, along with your rolling resistance. All the together =
I'd try to do the 4.10s now.

I had 4.11s in a Tahoe with a 4L60, and I actually hated it. I felt like 4.56 would have been a much peppier choice
Your results may vary, but I would 10000000% consider a regear, and 4.11 would my minimum choice. Based on almost 120k mi of experience lol
