question, whats the best way to go about doing?
i was going to just buy a vsc with the probe in the raidator..

The 05-06 Escalade fans are for a 34" radiator, the LS1 fans are for the 28" radiator found on the 4.8 and 5.3L engines. As I recall all the 6.0L engines also had the 34" radiator.

With the correct radiator, it is a bolt in operation. You should use the search button and there are several step by step write ups of removing the clutch fan and installing the radiator.

The VSC probe for the radiator is a partial fix for your problem, a better solution is getting an efan harness from Blackbear, Nelson, PCM, etc or making your own. Again the SEARCH button has several detailed drawings of the electrical system of how you can make your own harness. After that is installed then you will have to get the PCM programmed to turn those fans on and at what temps you want them to come on at.

You can make your own harness for about $30-50 or buy an aftermarket harness for $90-100.

By the way, if you do not want to upgrade your radiator to a 34" one, you can easily sell the Escalade fans in the classified. The LS1 fans are usually 1/2 the price of the 05/06 fans. I am sure others will chime in with their particular installations, almost any of them will work, what you need to determine is how are you going to use them.

If you are racing, you may want a manual override switch, if you have mild summers, you may want the smaller LS1 fans and radiator, if you have extremely high temps (90+ or as some areas of the call it dry heat but 100+) you may want to opt for the 34" rad and 05/06 fans.
