why is cooler fan hitting the fan shroud on sharp turns

Sounds like something (cooler, shroud or fans) is loose, allowing it to move in turns.

Bad engine mounts allowing the engine to slop to one side. Get someone to put the truck in gear, set the parking brake and stomp the brake as hard as possible. Go from Drive to Reverse *rev to 1500 after gear is set* and see how much the engine pops up and down and side to side. If it moves more than 3/4" in any direction the mounts are defective.

Yeah probably a broken engine mount or fan shroud.
