Are you sure there is no water in the oil? I would pull the drain plug and see if there is any water/anti-freeze that comes rushing out first. The oil will sit on top of the water and can appear ok on the dipstick. It sure looks like a head gasket was seaping. That's an awful lot of condensation. Did the motor "smoke" any?

All a catch can is anyway is a big water seperator. All the air your PCV pulls in that is damp, it removes most of the water. I have 2 small catch cans and if i do alot of around town short trips mine looks like that, but if i let it run for awhile the water vaporizes off and leaves just the light brown oil.

it isn't the head gasket, oil is clean, oil cap is clean, coolant is clean and full.

sounds like condensation. no biggie
