Default Overflow please read

Ok I wanna do away with my stock ice cube tray looking over flow but i need some input from yall.First off i wanna get rid of it cause im trying to dress up the engine bay.My under hood fuse station and pcm have found there way into the area that the windsheild wipers motor/arms used to reside. Battery was relocated under the bed along with that battery link that is attached to the back of the alternator bracket. It is a bagged truck so lots of the inner fender have fallen victim to the cut off wheel, and that is where my ice cube tray is supposed to go. I recently received my free STREET AND PERFORMANCE catalog they show in it some LS1 transplants into older cars. What they use is a nice little billitt 20 oz catch can that have provisions for two small hoses on the bottom and a flush cap on top. These trucks stock configuration is set up to have a return line to the overflow container(the lage hose) that taps into the heater hose outputs on the waterpump. MY QUESTION IS can i plug that hose off/take it off and hookup a catch can like the one from S&P and run my small raditor hose to it, run slightly less coolant.
What does the sensor on the bottom of the stock tank do, can you leave it unhooked.(its winter here can someone try it?) and does the coolant system need to be vented like the stock cap?
