Single 3" will be fine; stock is 2.75".

i agree i went from shortys with a single 3'' with 40 series flowmaster out the back to pacsetter longtubes with dual 3'' with turn downs just before the axle and i slowed down like 5 tenths

3" Y pipe is too much for the 4.8L. I even felt 3" was borderline too much on my stockish 6.0. I was very happy with my 2.5" Y pipe and it ran great at the track. You'd be fine running a 3" catback
