The truck, lets say it weighs in at 4500 lbs (should be heavier actually)

Power to weight isn't always the deciding factor in a street race. That bike rider actually has to pick the right gear to get that power to weight ratio.
I've beat a bike before in my SS but, it was just a little old POS Suzuki 650. The faster we went the worse it got for him.
After the third attempt(70-130mph) to pass me he stopped trying and gave me a thumbs up with a shocked look.

I beat a Harley V-Rod in my Tahoe. The bike has the advantage out of the hole especially with a good rider. If the rider isn't good out of the hole the bike is at a dissadvantage high revving engine with a relatively narrow powerband has to be well driven to perform at it's best. While the supercharged truck has tons of torque and is easy to drive. If the biker blows the start he's toast against a fast car or truck.

I have to admit if you do blow the start on a bike maybe 600cc and under, a fast car or truck will suck you up. I have had a few 1000cc sport bikes, the last was a "99" R1.I have never lost a race to anything on the street with that big rocket. Although some were really surprising if you had a race on the freeway once you are up to 80mph or so. From zero to one 120 (about 8 seconds on a 1000cc + bike) almost nothing can touch you, if you know how to bang through the gears. As far as gear selection goes... that only matters in a roll on. From a dead stop, if you don't loop the bike out it will be very hard for a car to smoke you. I just hope some day after countless hours of work and thousands of dollars in mods I will be able to blow away a bone stock open class sport bike that costs about 10-11k new, with an ok rider on board. Some day..........
